It’s meat free Monday again, and this week’s recipe is a delicious avocado and lemon cold pasta.
Pasta is one of the most versatile ingredients to make wonderfully diverse meals. This meat free Monday recipe will not only become a favourite in your home but it’s also easy to make. A cold pasta is also just what the doctor ordered in this summer heat. Never-mind that avocados are now in season and thus it’s not costing you an arm and a leg anymore.
Prep time: 10 minutes
Cooking time: +- 20 minutes for the pasta
Serves: 2 portions

- 1x big, ripe avocado
- 1x dry cup of pasta (I would suggest shells or twirls)
- Handful of chopped coriander
- 1-2 tbsp of freshly squeezed lemon juice
- 1 tsp of chopped garlic
- 3 tbsp of mayonnaise
- salt and pepper
Cook pasta according to package instructions and set aside to cool when done.
Peel the avocado and remove the pit. Put it together with all the other ingredients (except the pasta) in a blender and pulse so that it is a chunky consistency. Place in the fridge for 10-15 minutes.
Add avocado blend to cooled pasta in a medium-sized bowl and garnish with coriander. Enjoy!
