Homemade vegetarian patties

Instead of popping a pre-made veggie patty from the freezer into the microwave, make your own vegetarian patties.

I always have vegetarian patties in my freezer, they’re easy to prepare – one minute in the microwave – and viola, a quick veggie burger dinner is born. If you are vegetarian, you’ll know that we do not have much variety. There are currently three brands offering some sort of vegetarian meat replacements. I wanted more flavour and thus decided to attempt making vegetarian patties from scratch.

My taster is my boyfriend, Mark, who is a tough cookie. He’s a food and wine snob, no getting around it…and also eats meat. He has a couple of favourites that I cook, so he’s not against vegetarian food. He just needs it to have good texture and flavour.

I decided on Falafel patties with humus. It was pretty simple to make and was packed with subtle flavour.

I made the humus first and then the patties.

Humus

Ingredients:

1x can of chickpeas (drained)

2x table spoons of olive oil

1x small clove chopped garlic (to taste)

2x table spoons of lemon juice

Making hummus

Method:

Combine all the ingredients in a food processor and process until it’s smooth. Season with salt and pepper to taste. I added a teaspoon of peri-peri sauce.

Vegetarian patties

Ingredients:

1x can of chickpeas (drained)

1x finely chopped onion

2x crushed garlic cloves

2x tsp ground coriander

2x tsp ground cumin

1x small pack of chopped parsley

2x tbsp of flour

2x tbsp vegetable oil

Method:

  • Pulse the can of drained chickpeas in a food processor until broken up into coarse crumbs
  • Add the onion, garlic, spices, parsley, flour and continue to pulse until combined.
  • Using your hands, form the mixture into four patties
  • Heat the oil in a saucepan and fry the falafel patties for about three to four minutes on each side or until golden

Prepare your burger buns by buttering the two halves. Add garnish and the hot vegetarian patty straight from the pan. Top with humus and serve with a side salad or potato chips.

It really is as easy as that and it’s delicious. Mark loved it and had two burgers! I take that as a win.
